Very Nutty Banana Bread

One of the easiest recipes with no need for a stand or hand mixer is banana bread or banana muffins. Most recipes call for just white sugar, but I like to add brown sugar to give a different flavor of sweetness. I like the sweetness to be a total of a cup, but adjust the level of white sugar to 1/4 by adding or taking it away.
There are other changes that can be made by adding different types of nuts or chocolate chips. Also adding or using pumpkin spice would be a good substitute for all the spices. You can also melt chocolate and add it to the batter to create streaks of chocolate.
A good tip before adding any additions to the mix is to toast any nuts. After toasting the nuts tossing in a little salt and sugar help to add some extra flavor. Another good tip is to prevent any mix from sinking would be to mix with a little of the dry mixture or the flour.
3 medium very ripe bananas, peeled and mashed
1/3 cup butter, unsalted and melted
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1/2 cup brown sugar
1/2 cup white sugar
1 large egg, beaten
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon ginger
1 teaspoon nutmeg
1 teaspoon cinnamon
2 cups of nuts (pecan, walnuts, almonds)
Preheat oven to 350 F
Mash bananas to a paste; optionally leaving some chunky pieces a different texture
Add egg and melted butter
Add white and brown sugar mix till no lumps of sugar is visible
In a separate bowl sieve together flour, salt, spices, and baking soda and powder separate 1 tablespoon
Mix the 1 tablespoon with the toasted chop nuts, leave some unchopped n floured for topping
Mix together the dry and wet ingredients until homogenous or no pockets of flour
Fold the mixed nuts to the mix
Grease and optionally line one 8” loaf pan
Pour batter into the loaf pan and top with the whole nuts
Bake at 350 F for 30-40 min or until a clean toothpick
Allow cooling for 30 min before slicing
Optional serving:
Slice the banana bread and lightly toast in a pan; then spread a light amount of butter or honey butter.
